The Warriors Breafast Brunch

I am going to do 2 blog posts today. I want to give proper attention to 2 days.

On Sunday, Mike decided he wanted to host a movie brunch with some of his friends at work. He wanted to serve a simple meal that wouldn't take much time, cost a lot, and be tasty. He decided to make breakfast tacos, and I decided to do a french toast casserole.

And yes Sarah & Mike, I made it more like a casserole, instead of baked french toast. haha. I only pointed them out because Mike got into a debate how baked french toast isn't a casserole just bc it is served in a casserole dish. Sarah and I pretty much just told Michael we really didn't care enough about the distinction to pick a side. haha. So I ended up just making bread pudding, with french toast flavors. I used raisin bread, heavy cream, fat free milk, cinnamon, sugar, nutmeg, maple syrup, and chopped apples. I let the ingredients soak for a bit in the fridge for 30 minutes then baked it for about 45 minutes. It came out delicious if I say so myself.




The breakfast tacos also turned out well. The only addition I made to them was that I made some potatoes with garlic, onion, chipotle powder and butter. Delicious.




We had a pretty big group of film kids there, all watching the movie Warriors. Have any of you seen it? It is absolutely ridiculous, and really rather strangely violent.



After everyone left I cleaned up the house a bit. Then spent time putting together my favorite home made meals page.

For a late lunch, around 5pm, I had some leftover cajun food and a salad.








Then we went and played soccer at Zilker with a few friends for about 1.5 hours. It was a great workout, not as long as I had hoped, but probably better because the Achilles was hurting.

Before soccer I foamed rolled and did Achilles stretches for about an hour. After, I foam rolled and iced for an hour. This injury really takes up a lot of time.

For dinner I had a couple of crackers. I was not hungry at all and decided to pay attention to my  hunger instead of the fact that it was "dinner time".

  1. Sorry I am just reading this now, but that casserole looks AMAZING!!! :) [And I still think we were right in that it doesn't matter what you call it as long as it tastes good.]
