Yes I know I got married awhile ago, but I just got around to officially changing my name. So far I have only done it at the social security office. I need to do the whole drivers license thing, and all the other super fun stuff. If you have any suggestions on making the changing the name process easier, please let me know. Seriously. Yes, I said seriously.
Lets get back to yesterday.
I started my day with a raisin english muffin with cinnamon swirl pb.

I packed a lunch but then somehow I got myself entrapped in going to lunch and paying for a lunch, at a place I am not even that thrilled with. and I forgot my camera. Imagine a falafel wrap.
It was birthday celebration day at work. I got one tiff's treats cookie. I later wanted something salty so I had a few pb pretzels.

After workI went to the gym. I started with stretches (wow!). Then I did 5 minutes on the stair torture machine to stretch the achilies out even more. Then I did an interval run on the treadmills. When running I kept at a 6.5 -7.5 pace the entire time. Yay. Then after that I did 34 minutes on the elliptical. Phew.
I wanted veggies badly, as I had mentioned yesterday. But we had no fresh veggies in the house. So I threw together this frozen veggie/potato mix thing, then added more veggies to it, and then some cilantro coconut sauce I got from Central Market. It tasted a lot like an indian dish I have had before but I forgot which one. Anyway, I also got some couscous ready. I first added couscous to the bowl, then some the veggie sauce mixture then some coconut. For a dish that took about 20 minutes to make, this was very tasty. yay!

Today I will be meeting up with Meredith from anepicchange.com as well as Teddy and Sarah and Corinna at Foodheads. I am excited for the meet up. Yay.
YAY MRS THIELVOLDT!
