I was also supposed to have a doctors appointment with a physical therapist. But I couldn't find the doctor in my network. So I called to cancel and they said they didn't have an appointment with me. hah. So I am going to call another one today and try to make an appointment. My insurance rep recommended one. They are kind of far, but she says they are amazing. I don't mind driving further if they are amazing.
So lets go back to Saturday, which I wish I was at right now.
I started my day off with a delicious breakfast made by the Husband. He went ALL out. He grilled some apples with brown sugar with a splash of water. He wanted to add whipped cream but what we had was no longer whipped so he added cinnamon to it to make a cinnamon cream sauce. Then he made some french toast (he is the best at it) and then topped it off with the grilled apples, whipped cream and some pecans. This meal was absolutely amazing. Best breakfast in a long time. Mmmmmmmm.

Breakfast kept me full from 1030am until 3pm. I didn't start lunch until 3, and it took awhile. I cut up zucchini, yellow squash, onions, garlic, sweet potatoes and mushrooms. I put them in some tin foil with some black beans and put them in the oven at about 400 for an our. The sweet potatoes took forever. I also made some quinoa to go with the dish and added some feta at the end. This was one of the best lunches/dinners I have had in awhile. Soooooooooo good.

Later in the evening I went to watch the Aztex, a soccer team in Austin. It is a major league team, and was pretty fantastic to watch. It was a high scoring game too, which made it exciting. The Aztex won 4-2.




After the game it was around 830 or 9 or later? I don't remember. Either way I was starving. We all decided to get some drinks at the Tavern. our waitress was possibly the worst waitress I have had. Okay probably not, but she was pretty awfu she even forgot someone's order completely. It took about 25 minutes to order. And then I am pretty sure it was close to an hour before I got my meal. By this time I was dying. I ate 1/4 of a california burger (just means with avocado and sprouts) and a lot more of the bun and other goods. Just not more than 1/4 of the meat. And then I ate a lot of the fries. I felt gross sick afterward.

On Sunday morning I woke up wanting something healthy. I made some yogurt with Kashi's version of grape nuts, granola, and grapes. Delicious. Amazing.

I then did a bunch of chores and errands. For lunch I had some leftover roasted veggies and quinoa. Mmm. This time I added pine nuts, but those were kind of stale so not so tasty.
Then I had some Artic Chill (thanks for the suggestion Sarah!). The entire pint has 150 calories. I had about 1/4 of it and was good to go. It tasted like a fudgsicle. The ingredient list didn't look bad at all either. Just lots of coco and whey protein I guess.

For dinner I wanted to make something like capellini pomodoro. I cut up onions, garlic , and mushrooms and then threw on a bunch of cherry tomatoes and pancetta. I let them sit on the cast iron on low for prob 20-30 minutes. I know this is not the way to make a traditional pomodoro, but deal with it. This mix was amazing. I added some oregeno, salt and basil to it. Then I cut up fresh tomatoes, and basil, fresh mozzarella and added more oregeno, garlic gold and some salt. I heated up a bunch of whole wheat capellini. Once everything was ready I mixed it all together. Possibly one of my best italian(ish) meals I have ever made.

I was supposed to go to a sock hop last night but plans turned into starting at 10pm and I just couldn't do it.
Today the plan is to workout after work. Possible some elliptical to stretch out the arms. So sore. haha.
my roommate & her boyfriend go to the Aztex games all the time! my roommate played soccer for our undergrad school and she and her bf play for a league with his work buddies. maybe I'll go with them one day and run into you!
