Breakfast
There were no children at my house for Christmas so we ended up waking up and eating a leisurely breakfast, and some even took a nap after breakfast. I had some quiche again for breakfast.
Christmas "Dinner"
Mike, Diva, my Dad and I spent the rest of the day prepping for Christmas Dinner. We were lucky enough to be given a honey baked Ham, which made the meat prep a breeze.
I made a salad with roasted beets, feta cheese and sliced honey almonds. I also made the sweet potatoes, and roasted carrots. I have never made roasted carrots before, or perhaps even eaten them, but they were heavenly. I might do this will the carrots I get from the CSA now.
Diva made the corn casserole, which is what I request every year. Mike made sure the meat was heated up. My Dad made the mashed potatoes. Mmm.
Overall it was a pretty amazing meal, and with all the help, it wasn't very hard to get done. We ended up eating by 2pm.
Dinner and a Movie
Around 530 we headed to the Drafthouse to watch The Girl with the Dragon Tattoo. My dad had never been to the theater, and Diva surprised me with saying it was her first time at the theater in Austin. They had a fun exhibit for Tin Tin that we stood behind.
The movie ended up being pretty great, much better than the Sweedish version. I think everyone enjoyed themselves as well.
I ended up eating their goat cheese salad and partially regretting that I ate probably about 1lb of lettuce.
